I've noticed if you use too much butter that the onions do not caramelize as well. I tend to use a medium high heat and less butter than the recipe calls for.

Hi Beth

Stepped in quite late into the thread!

Add dash of dried fenugreek to butter chicken 5-10 mins prior completion.
It will add new dimension to the taste!!

Default Mayuri on the Bothell-Everett Highway

Used to be regulars there with a friend. The owner came by to chat one day and I mentioned that my co-workers and I used to go out for Indian lunch almost every Friday back when I was in San Diego. He immediately said "Ashoka the Great on Black Mountain Road." We gave each other high-fives. Small world!

The recipe looks authentic and great!!!
